MODERN HISTORY (375ML) Jura Vin Jaune Barrel Aged Sour

A collaboration with Michelin 3* Caprice Director & Head Sommelier Victor Petiot. Started with a clean sour beer, which we then aged for 24 months in first-use Vin Jaune Barrels from the Jura, a part of the Franche-Comté region.

We don’t always discuss beer’s terroir, but the sour base and barrel-aging here brings out beautiful oxidative character, tart stone fruit and nutty notes that match Comté cheese or a range of other food pairings, from chicken and earthy mushrooms to autumnal Hairy Crab, or perfect to drink on its own.

Nose: Bright funk, Hazelnut & Stone Fruit
Appearance: Deep Amber with low carbonation
Taste: Oxidative notes, with clear funk, including pediococcal and Brett notes, Walnut and hazelnut. Easy sourness. Smooth.
